The percentage tells you how much of the chocolate comes from the cacao bean itself: the cocoa solids and the cocoa butter. The rest is sweetener and other ingredients. So a higher number means more cacao and less sweetness.
That is the whole rule. Everything else is taste.
55%: creamy and gentle
This is the easy one. Soft, rounded chocolate flavour, close to a really good milk chocolate. If you are new to dark brownies, start here.
70%: balanced and deeply chocolatey
Our favourite. Rich cocoa with a little bittersweet edge that makes each bite feel finished. It is the one most people end up choosing.
85%: bold and intense
For serious chocolate lovers. It is less sweet, with a deep, almost espresso-like finish. It pairs beautifully with a pinch of sea salt.
Not sure? Pick 70%. Whatever you choose, you can change it in the designer and watch the brownie darken as you go.
